Standard Italian and the Italy you actually hear
The Italian in most courses is a shared public variety, historically close to Tuscan. It is real Italian. It is not always what people speak at home. Rome, Naples and Milan keep local forms and habits alongside the standard — ‘daje’ in Rome, Neapolitan spoken habits with their own attention-getters, and dai as a prompt or softener with different flavour by region.
That is not a trick where ‘textbook Italian’ is fake. Public life, media and school still use the standard. Following Italian well means hearing both: the shared language, and the regional colour around it.
Italian conversation often carries meaning in rhythm, volume and gesture. Hands and face frequently help make a point; you learn that by watching people, not by memorising a catalogue.
